One of my favourites to make in the morning and it will keep you going till lunchtime. I like to serve it with dollops of coconut yoghurt and fruit sauce.

Makes: 5 Pancakes
- 1/2 cup almond meal
- 1 heaped tablespoon Salted Caramel protein
- 1/2 tsp. ground flaxseed
- sea salt to taste
- 2 eggs
- 1/4 cup unsweetened almond milk or coconut milk
- 2 tbsp. coconut yoghurt
- 1/3 cup of frozen berries with a splash of water
Method:
- Whisk eggs in bowl or jug and add the almond meal, flaxseed, protein powder, salt and milk.
- In small saucepan, put your frozen fruit with a bit of water. What you want to do here is create a fruit sauce for your pancakes. Don’t put in too much water but enough that you can mash your fruit down into a sauce consistency.
- Lightly oil a skillet or fry pan. I use coconut oil but you can also use olive oil. Pour around a 1/4 cup of mixture onto the pan and wait until the mixture bubbles to flip.
- Meanwhile heat up the frozen fruit and water in a pan and bash down the fruit into a pulp/sauce. Turn heat down after a while and simmer.
- Serve with dollops of coconut yoghurt and pour fruit mixture over the top.
