Fish Tacos with Lettuce Cups

Ingredients:

Serving: 1

  • 2 large oranges juiced
  • 1/2 lime juiced
  • 3 TB olive oil or coconut oil
  • 1 tsp. cumin powder
  • 1/2 tsp salt
  • 2 white fish fillets
  • 3-6 butter lettuce leaves
  • 1/2 red capsicum
  • 1/2 red onion (diced)
  • 1/2 mango (diced)
  • 1/2 avocado (diced)

Method:

    1. Mix the orange juice, lime juice, olive oil, cumin and salt in a bowl and combine well.
    2. Gently place the pieces of white fish into a large ziplock bag and pour in the juice and marinade for 2-4 hours in the fridge.
    3. Heat some olive oil or coconut oil in a pan. When the pan is warm add the fish and cook for about 4-5 mins on each side.
    4. Lightly season the entire dish with chopped rosemary and paprika. Thinly slice the remaining lemon and place a few slices in the dish.
    5. Prepare your tacos how you like them, adding fish, capsicum, avocado, onion and mango to your lettuce shell tacos.
