Zucchini & Fennel Soup

I love this soup as its light, delicious and super easy to make.

Ingredients:

Serving: 1

  • 1 tbsp. Olive oil
  • 3 zucchini, chopped
  • ½ onion, chopped
  • ½ fennel bulb, chopped
  • 3 cups chicken stock
  • Salt and pepper to taste.


Method:

  1. Heat olive oil in a large skillet or soup pot and add zucchini, onion and chopped fennel.
  2. Season with salt and pepper, cook for about 10-15 mins.
  3. Add stock, bring to boil and simmer until soft.
  4. Put everything in the blender. Salt and pepper to taste and serve.
